WOT and Hydro Options

I'm in the market for a new mower and tend to research ALOT before making a decision (especially when the purchase is north of $5k). I've read that it is recommended to warm up your ZT then cut at wide open throttle (WOT). In my search for a new zero turn, I read a response from Carscw (I think) in one of the threads where he said a larger Hydro isn't always better, and it got me thinking..... In my 2.5 acre yard, I don't know that speed will be my friend. It has some bumpy terrain, a few trees, and debris where higher speed may not be necessary. Would I be better suited looking at a mower with a ZT-3100 hydro rather than a ZT-3400???? Both are rated as commercial, the higher models allow for more torque, but ultimately, what would be better for my needs?
